Ssäm is Korean for enclosed or wrapped! A pork shoulder is cured overnight, then slow roasted for 6-8 hours before being glazed in brown sugar and its roasting juices. The Bo Ssam feeds 6 to 10 people, and includes the slow-cooked pork shoulder, a dozen oysters, and two bowls each of white rice, bibb lettuce, Korean-style barbecue sauce, kimchi and ginger scallion sauce. Guests are encouraged to make wraps with the pork and condiments or eat as they please.
